I don't claim these "feats" to be extremely hard or myself being an experienced soloer. I rather represent some nice challenges that I was able to complete.
As I don't have a video recording program, images will have to do (This means that there's no foolproof proof and you just have to trust my word).

Comments as well as suggestions for future feats are welcome.

Feat 1:
Cloben, lvl 68 rare nemesis (Drake)

Info:
-Can be found in Thror's Coomb
-Not immune to cc
-There is a quest which you get after defeating it

Feat 2:
Brathach, lvl 66 elite master (Giant) + a lvl 65 elite bear

-Immune to cc (The bear is not)
-Defeating him is a part of a repeatable quest in Thror's Coomb

Feat 3:
Tantafod & Harcennun, both are lvl 66 elite masters (Drakes)

-Can be found in Thror's Coomb
-Not immune to cc
-The fights are separate (You dont have to fight them both at the same time)
-Harcennun uses fire-hotspots that pop right under your feet (It's not a skill so there's no way to interrupt it)
-There is a repeatable quest in Thror's Coomb for summoning and defeating these two

Feat 4:
Dagorches, lvl 66 elite master (Cargul, Unseen)

-Can be found in Dol Guldur (Often near the entrance of Sammath Gul)
-Immune to cc
-Uses several skills which apply various fear effects
-Drops a mithril flake

Feat 5:
Trinash, lvl 65 elite master (Troll)

-Uses a skill that can stun

Feat 6:
Krahjarn Tyrant, lvl 65 Nemesis (Troll)

-Can be found in any of the outposts in Ettenmoors while they are controlled by creeps
-Not immune to cc
-Uses a skill that can stun

Feat 7:
Legbarthil, lvl 65 elite master (Spider)

Info:
-First boss in the Northcotton Farm instance
-Immune to cc, but can be slowed
-Spawns an egg at 3 certain hp-treshholds. The egg will soon hatch and the hatchlings will heal the boss. You can either try to destroy the egg fast or just ingnore them, since they only appear once at each treshhold (a total of 3 times).
-Once in a while the spider also spits poison on you which turns into a pool of poisonous gasses. Keep moving to avoid these.

Feat 8:
Tímurzgrat, lvl 65 elite master (Orc)

Info:
-Can be found in Lugdúmp (Gathburz, Mirkwood)
-Immune to cc, but can be slowed
-Has a corruption which increases his damage by 50%. This corruption can be removed in three phases (50% - 25% -10%).
-Several normal enemies spawn nearby, so caution is needed.

Feat 9:
Ilzkâl The Pummeler, lvl 58 elite master (Orc)

Info:
-The first boss in The Grand Stair -instance.
-Immune to cc, but can be slowed
-Hits incredibly hard and fast (Even as I'm lvl 65)
-Uses fear DOTs, silences and, later on the fight, a special fear that can be consumed for a large heal to the boss (all these can be removed).

NOTE: These were all accomplished at lvl 65
